Ocean-Friendly Seafood

White Maple Café is a Monterey Bay Aquarium Seafood Watch® partner, which means we work with Seafood Watch to provide our guests only environmentally responsible seafood. All of the fish we serve is from populations that are plentiful and in good health and is caught or farmed sustainably. Additionally, the fishermen who catch these fish must do so in an environmentally ethical manner, being careful not to damage the surrounding ecosystem or other marine life.

Grass-Fed & Free-Range Meats

White Maple partners with farmers and ranchers who raise their animals humanely, sustainably, and without hormones or antibiotics. We serve organic, 100% grass-fed beef from Reunion Foods. We serve pork from pasture-raised, domestic heritage breed pigs. We are proud to support Nature's Choice Farm and Nicolosi Fine Foods in sourcing all our sustainably-raised bacon, chorizo, and pork shoulder. All of our poultry comes from Goffle Road Poultry Farm in Wyckoff, NJ.
Reduced Carbon Footprint

Reduced Carbon Footprint

White Maple makes every effort to minimize its carbon footprint; we purchase our ingredients from local farms and sources whenever possible. We also use LED lighting, high-efficiency hand dryers and toilets, low-spray valves, and recycled paper takeout containers. We only give out straws upon request. We also provide many vegetarian options on our menu which have a much lower carbon footprint than meat-based dishes. We take our commitment to sustainability very seriously.
